"~ " RONALD STRENGTI-I SHERIFF February 6, 2002 Mr. George Kolb County Administrator City - County Building Augusta, Georgia 30911 Dear George: On Monday morning, February 4th, I received concerns from the Jail Food Managers regarding groceries not being delivered. After contacting purchasing, we were told that groceries for both facilities had not been ordered for this week. Needless to say, we were very concerned, since we have approximately 900 inmates to feed. My staff worked all Monday morning with Mary Bedenbaugh in Purchasing, attempting to persuade vendors to deliver the necessary items. We were successful in some areas but in the area of large meat orders, we were not. I would like to stress to you the importance of having groceries ordered and delivered in a tinlely manner. The Richmond County Jails are mandated to have menus on file for 90 days with all substitutions recorded. All food served in the kitchen has to be recorded so accurate records can be nlaintained in the event of food poisoning. We must also retain these records for 180 days for review by the Dietician Consultant for nutritional value. I am sure that you can imagine the increase in paper work that was required when purchasing failed to order groceries as requested. On any given day, we have to prepare special menus for diabetes and also snacks that may consist of up to 3 times a day depending on the medical status of the inmate. Also, other special diets are prepared for inmates who have special needs, as prescribed by the Jail Physician. The facility at 401 Walton Way is limited in cooler and freezer space for the storage of perishable goods. It is imperative that the requisitions we send to purchasing are fielded in a timely manner to prevent the shortage of food products that are essential for the health and well being of the inmates.
